Nguyên liệu
  • 1kg thịt gà (thịt gà ta sẽ ngon và dễ xé thành từng sợi)
  • 4 thìa canh ớt sa tế
  • 2 thìa canh tỏi băm
  • 2 củ hành tím băm
  • 2 nhánh sả được đập dập
  • 1 thìa cà phê tiêu
  • 2 thìa cà phê đường
  • 4 muỗng canh nước mắm
  • 2 muỗng cà phê muối
  • Vài lá chanh
  • 2 củ hành tây
Cách làm
Bước 1: Thịt gà đem sơ chếvà rửa sạch. Nấu một nồi nước với sả, lá chanh, hành tây và muối, khi nước sôi cho thị gà vào luộc đến khi chín. Sau khi thịt gà chín thì vớt ra cho vào đĩa để khi nguội rồi sau đó xé thịt gà thành từng sợi nhỏ.
Bước 2: Bắc chảo dầu lên bếp, dầu nóng, cho thịt gà xé sợi vào chiên hơi vàng thì vớt ra đĩa có lót giấy thấm dầu (cách chiên này giúp thịt gà có độ giòn ngon hơn).
Bước 3: Bắc một cái chảo khác lên bếp, cho 1 muỗng canh dầu vào, chờ dầu nóng thì cho hết hành tỏi băm vào xào thơm. Sau đó cho hết tương ớt sa tế cùng các gia vị còn lại nấu sôi. Cuối cùng cho thịt gà vào đảo đều cho tất cả mọi thứ trộn đều với nhau là tắt bếp.
Chờ thịt gà khô xé sợi nguội mới cho vào hũ, đậy nắp kín bảo quản trong ngăn mát tủ lạnh dùng dần.
Món ăn gà xé sợi xào cay được kết hợp từ những xớ thịt gà thơm ngon kết hợp với vị cay cay của ớt càng làm cho món ăn trở nên kích thích tột độ. Thật tuyệt hơn khi ăn gà xé kèm với cơm trắng hoặc nhâm nhi cũng khá thú vị.
