Cách gói bánh chưng gấc không cần khuôn vừa ngon vừa đẹp

Bánh chưng gấc dẻo ngon, có màu đỏ đẹp sẽ đem lại nhiều may mắn cho cả gia đình bạn.

PHẦN 1: CHUẨN BỊ NGUYÊN LIỆU

- Gạo nếp ngon: 1,5kg ( làm cho khoảng 4 đến 5 chiếc) tùy vào kích thước của khuôn
- Đỗ xanh: 0,5kg
- Gấc chín
- Thịt ba chỉ hoặc thịt nạc vai: 0,5kg
- Lá dong
- Hồ tiêu, thảo quả, gia vị.

PHẦN 2: CÁCH GÓI BÁNH CHƯNG GẤC

Bước 1: Gạo nếp ngâm qua đêm rồi đổ ra rá để ráo nước, cho thêm chút muối rồi đảo đều.

Bước 2: Đỗ ngâm cho nở rồi vo sạch để ráo nước, sau đó cho đỗ vào nồi hoặc chõ hấp cho chín mềm rồi nghiền nhỏ nắm thành từng nắm.

Bước 3: Thịt rửa sạch, cắt miếng vừa tẩm ướp cùng hồ tiêu, gia vị, thảo quả cho ngấm.

Bước 4: Lá dong rửa sạch, chọn lá đẹp, lau khô. Nếu có thời gian, có thể chần qua lá dong với nồi nước sôi để lá dẻo, dễ gói bánh hơn.

Bước 5: Gấc nạo lấy ruột rồi trộn cùng gạo, thêm chút đường tùy theo sở thích.

Bước 6: Sau khi đã hoàn tất khâu chuẩn bị, chúng ta bắt tay vào công đoạn gói bánh.

- Lá dong gấp theo các bước như hình.

- Dựng dọc chiếc lá rồi gấp mép như hình.

- Lần lượt gấp thêm 3 lá như trên rồi đặt vào khuôn.

Bước 7: Sau khi đã gấp lá tạo khuôn xong, chúng ta thực hiện khâu làm vỏ và nhân bánh. Đầu tiên đổ một lớp gạo rồi dàn đều.

- Tiếp theo là lớp đỗ và thịt.

- Cuối cùng đổ tiếp lớp gạo lên trên.

- Sau khi xong phần nhân bánh, chúng ta gấp lá lại rồi dùng lạt buộc chặt bánh.

- Lần lượt gói tiếp những chiếc bánh khác đến khi hết nguyên liệu.

- Khi đã gói bánh xong, lấy phần cuống lá dong và một ít lá dong thừa xếp xuống đáy nồi, sau đó xếp bánh vào nồi rồi đem luộc trong khoảng 10 tiếng.

- Trong quá trình luộc bánh, cần chú ý lửa và nước để bánh được chín rền.

Bước 8: Khi bánh luộc chín, vớt ra để nguội rồi dùng vật nặng có mặt nhẵn như chiếc thớt gỗ đè chặt lên trên bánh để bánh chắc và được khô.

Để bánh chưng gấc như vậy sang ngày hôm sau rồi nhẹ nhàng nhấc từng chiếc bánh đặt vào đĩa mang thắp hương hoặc cũng có thế tháo lạt, lá dong rồi cắt thành từng miếng đặt vào mâm cỗ cúng.
